Diced salmon with roast potato salad and tomato sauce

INGREDIENTS
for 4 servings

One bag of diced salmon

One jar of homemade tomato sauce

4 medium-sized potatoes

Roast the potatoes: one medium potato for each person is sufficient. They can be roasted in the oven or in the micro wave (from 5 to 8 min., depending on the size of the potato). Once roasted, peel and cut them into rectangular pieces that are not too thick, as otherwise they will not fit in your mouth!!. Fry the cubes in a frying pan (without any oil, just toss them in a hot frying pan).
Now it’s time to arrange the ingredients on the plates!!!. Place a spoonful of homemade tomato sauce on each plate and then the diced fried potato, season to taste and then place the salmon on top. Stick some toothpicks into it to make it easier to eat. What a scrumptious aperitif!!!!.
Suggestion: add pesto sauce instead of tomato, you’re sure to love it!!!
